This is Hattlingley Valley’s first ever demi-sec sparkling wine. Made from red grapes only, approximately 10% of the blend was fermented in old Burgundy barrels followed by lees ageing for five months in barrel to give added complexity and a creamy finish. Notes of brown sugar, ripe red fruit and pastry on the palate; it has a sweetness that compliments the classic English acidity to create a perfectly balanced wine.
